
ROASTED VEGETABLES

Ingredients:
1 medium onion, coarsely chopped
1 package mushrooms, whole
2 cloves Garlic, minced
3 tomatoes, halved
2 teaspoons Mama Jen's Salt Free Spice Blend
2 whole eggplants, sliced one inch thick
2 whole red bell pepper, sliced 2 inch width
2 tablespoons extra virgin olive oil
4 basil leaves, roughly chopped
1/4 cup Parmesan or Asiago Cheese, shredded
Directions:
After cutting vegetables, toss in olive oil, garlic and Mama Jen's.
Either place on outdoor grill or in roasting pan. Heat oven to 425F
and bake for 25 minutes, until golden brown. Place on serving platter and sprinkle basil and cheese on tomatoes. You may drizzle a little more olive oil before serving.
