
FRITTATA with GROUND TURKEY & VEGETABLES

Ingredients:
1 medium Onion, diced
6 large Eggs, lightly beaten
1 bag Spinach, chopped
1/2 lb. Ground Turkey, cooked
3 stalk Scallions, chopped
1 teaspoon Garlic, minced
2 tablespoons Olive Oil
1 tablespoon Coconut or Almond Milk
1 medium Tomato, diced
Directions:
Preheat oven on medium broil. In cast iron skillet or oven safe skillet, saute onions and ground turkey. Add spinach, scallions and garlic. Pour egg mixture (eggs, Mama Jen's and coconut or almond milk, beaten) into pan over medium heat. As the egg mixture sets, use spatula to loosen around the edge and fold in uncooked egg to distribute evenly, about 5 minutes. Transfer pan to oven and broil for about 3 minutes, until slightly browned. Remove and cut like a pie to serve. Sprinkle diced tomatoes on top.
