Cook time: 15-20 minutes



4 whole Boneless and skinless chicken breasts, cut in strips
3/4 cup Coconut Flour
1 small can  Coconut Milk
3 whole Eggs, beaten
1 cup Shredded Coconut, unsweetened
2 teaspoons Mama Jen's Salt Free Spice Blend
1 teaspoon Black Pepper


Preheat oven to 400 degrees.  Pound chicken breasts to about 1/2 inch thick.  Cut in strips.  Combine eggs and coconut milk in one bowl.  In another bowl, combine coconut flour, Mama Jen's and black pepper.  In third bowl, add shredded coconut.  Dip each piece of chicken in the flour, then the egg mixture, then coconut.  Place on baking sheet (best if place on wire rack on baking sheet for crispier chicken.  Place in oven and bake for about 10 minutes, until done.  Serve.
