BRUSCHETTA

Prep time: 15 minutes

Cook time: 12 minutes

 

Ingredients:
3 large Tomatoes, diced
1 medium Onion, diced
2 cloves Garlic, minced
4-5 leaves Basil, fresh, minced
2 teaspoons Mama Jen's Salt Free Spice Blend
1 teaspoon Black Pepper
1/4 teaspoon White Pepper
1 tablespoon Olive Oil
1 tablespoon Earth Balance Margarine
2-3 tablespoons Sherry
1 whole Baguette, sliced, 1/4 inch 
1/2 cup Gruyere Cheese, shredded

Directions:
Sauté tomatoes and onion in Earth Balance and olive oil.  Add garlic.  Cook for 3-5 minutes over low-medium heat.  Add spices and fresh basil.  Add sherry and let reduce.  Place bread on baking sheet and bake at 375 degrees for 5 minutes until crisp.  Spoon tomato mixture over sliced baguette.  Top with Gruyere cheese.  Bake for 10 minutes at 375 degrees.  Broil for 2 minutes until brown and bubbling.
