BAKED STUFFED LOBSTER WITH SCALLOPS

Ingredients:

4 1 1/4-1 1/2lb Lobster, live
8 large Scallops, raw
2 sleeves Ritz Crackers, crushed
2 tablespoons Worcestershire sauce
1/2 cup Earth Balance Margarine, melted
1 tablespoon Hot Sauce
2 tablespoons Garlic, minced
2 tablespoons Mama Jen's Salt Free Spice Blend
Black Pepper, to taste
1 whole Lemon, juiced


Directions:

In large pot, add lobster to boiling water.  Boil for 8 minutes and remove and drain.  Combine crushed Ritz crackers, melted butter, garlic, Worcestershire Sauce, Mama Jen's and black pepper.  Mix well.  Cut the lobster on the bottom side from top to the tail and open slightly.  Place stuffing mixture in lobster and top with scallops.   Place in 350 degree oven for 15 minutes.  Broil for 3 minutes on medium broil until golden brown.  Squeeze lemon juice on top and serve with melted Earth Balance or butter.
